Easy Recipe to Spice Up Your Chicken Routine

I’ve been having lots of fun in the kitchen lately and within the past year of experiments, one recipe stands out. Just when I thought I had made every type of chicken I could and was just about “chickened out” I created a masterpiece which I like to call “Daizha’s Boiled-Seared Chicken.” It is so full of flavor and creamy sauce once complete and there are so many different styles you can create. I have not found a name or description of this style of chicken yet so I’m going to go on ahead and say it’s an original recipe until proven otherwise.

What’s so special about it?

Basically the process of making this style of chicken is filling a large pot or pan to completely submerge your chicken, fill with spices, and cook until the water is ALMOST boiled out which then leaves a creamy sauce at the bottom of the pan. 

You can even add in some rice or noodles towards the end for some razzle dazzle, or simply use the sauce as the spread for pasta. It’s amazing and easily one of my favorite chicken dishes

Time to prepare and cook: 

Depending on the size of chicken, this recipe can take anywhere from 2 hours to 6 hours. Your eyes probably widened at the 8 hours. But I’ll explain:

  • 8 drumsticks – 2 hours
  • 2 hindquarters – 3.5 hours
  • 1 whole Cornish hen – 5 or 6 hours 

Now that you have an idea of why this recipe is AMAZING, I’ll walk you through the step-by-step process of making a full meal with this technique. 

Zesty Boiled-Seared Chicken Rice Bowl 

Ingredients: 

Chicken

  • 2 Hindquarters or chicken of choice

Vegetables (and fruit)

  • 1 half red pepper
  • 1 whole bell pepper
  • 1 whole lemon

Spices

  • Seasoning salt
  • Garam Masala 
  • Turmeric
  • Ginger
  • Sea salt 
  • Paprika 
  • Chipotle powder 
  • Crushed red pepper flakes

Rice

  • Brown rice 
  • Jasmine rice 

Feel free to customize these ingredients to your liking!

Step 1: Fill large pot with water and turn on stovetop to LOW/MEDIUM heat

Place unthawed chicken into a large boiling pot and fill water to the brim to completely submerge chicken

Step 2: Cut 1 whole green pepper and 1 whole red pepper into string slices. Place into pot 

Step 3: Cut an entire lemon into thin rings

Be sure to remove the seeds if possible. You want to make sure the lemon slices are very small so that once the meal is complete you don’t just bite into a huge lemon chunk. 

Place lemon slices into pot 

Step 3: Spice it up! 

Now I will try to estimate approximately how much spice goes into each. I basically eyeball it but to give you an estimate of the flavor I would start with the basics of: 

  • Seasoning salt – About 5 heavy dashes 
  • Black pepper – 4 heavy shakes from the bottle
  • Sea salt – Just a dash 

What makes this dish so savory are the Garam Masala and Turmeric which come next in terms of the amount used. Garam Masala has a nice spicy, savory, and sweet taste. Turmeric is amazing for its anti-inflammatory properties so a few dashes of this adds a nice touch.

  • Garam Masala – ~5 tablespoons
  • Turmeric – ~3 tablespoons
  • Paprika  – About 2 dashes 
  • Ginger – 1 tablespoon

Spicy spices 

I don’t like my food too spicy so customize based on your likings. For me I use a few pinches of each 

  • Paprika – 3 pinches
  • Chipotle powder – 2 pinches 

Step 4: Cook thoroughly on low heat

Stir as the water continues to boil down. Gradually increase heat to MEDIUM as the chicken becomes more tender. This is usually after about 1.5 hours

Step 5: Add in rice when chicken is just about falling off of the bone and the water has enough in it for the rice to cook.

This will be about when the water is halfway boiled. Use this as cooking water for your rice.  

I like to make a medley of rice including brown rice and jasmine rice. The more rice you add, the thicker the rice bowl. For a more soupy dish, use less water

Step 6: Cook rice and chicken for an additional 15/20 minutes

Pay close attention to your pot because once the rice is included the water will soak up FAST. Leave a little bit of liquid as the sauce. If you accidentally cook it too long, it’s all good, just add more water to create the gravy with the remaining spices.

Step 7: Let cool and serve!
